1 30-50lb Steam Ship Round, lots of fresh cracked pepper, kosher salt. Cook in the 300* range until your desired doneness. Slice thin against the grain after resting 20 minutes or so.

Yep, I am with Larry. BUT, you would be better off doing some chucks. Most people dont know what steam round is and its hard to find.
