8.5lb chuck roast and 9lb brisket flat went on at 7am on the Primo XL, over Royal Oak and Hickory. Briskets for work on Wednesday and the chuck is for dinner! Both liberally rubbed down with Wolfe Rub Bold. I'll monitor these throughout the day while I'm sealing my fence. :roll:

15 gallons of Thompsons and $210 later, I still need 5 more gallons! Pretty easy job, just time consuming..... How in the phuck do I get the sealant off of me now???? Damn wind!

I'll post picks of the chuck in a bit, not done yet. Brisket is at 186* and chuck is like at 194* and in foil. Won't be long but I don't even feel like messing with it tonight.
 
You need 5 more gallons? How much is stuck on you? That stuff is a real pain to get off :shock:
 
Briskets done and turned out purdy good. Vac Sealed and ready for Wednesday!



Chuck on the other hand was one of the best I've done! Super tender, flavorful and moist!
