PUdding with Toasted Coconut and Chocolate Chips

I made this pudding for dessert tonight.

Toasted Coconut with Chocolate pudding

1/2 cup sugar
2 tablespoons cornstarch
3 cups milk
3 egg yolks
3 tablespoons butter
1 1/2 teaspoons vanilla extract
3/4 cup toasted coconut
milk chocolate chips

Combine sugar and cornstarch in a saucepan. Add milk and egg yolks and mix well. Bring to a boil over med-high heat and cook, stirring, for 2 minutes until it thickens. Remove from the heat and add butter and vanilla extract. Stir well. In a dessert dish, place 2 teaspoons of chocolate chips and 2 teaspoons of toasted coconut. Spoon pudding over it. Finish with 2 more teaspoons of chocolate chips and toasted coconut.

This pudding did not thicken to a pudding consistency during cooking. I refrigerated it for a couple of hours and it thickened up a lot more. I also didn't use chocolate chips but cut bit of milk chocolate off of a block I had here for some Christmas candy. Either way would work!
