Brined the 19lb turkey overnight and formed some Wolfe Balls. (Hardboiled egg, wrapped in Maple Sausage and rubbed with Wolfe Rub Original) kinda like a Scottish egg I suppose. Everything is on the smoker over apple wood, I'll check the Wolfe Balls in 45minutes or so.

 
mmmmm Scottish eggs are wonderful. Never ceases to amaze me how many great ideas you all have for the smoker.

I also had 1 bratwurst leftover from last night that I was gonna feed the dog. Then I remembered I had some mushrooms too. So I sliced the bratwurst up and stuffed one slice inside each mushroom cap, topped with Wolfe Rub Bold and Mexi Cheese and baked. These things ROCKED!!!!

 
Bird looks great.
Those Wolfe caps will be tried at my house this week! They sound great!
