Hiya Jason I am a former firefighter/paramedic with 23 years in the field, from here in Denmark SC, like you my skills are passed down from father to son . I currently do Q on a 55 gallon drum smoker with a side fire box , bigger one in the works with two drums for a cooking chamber , you dont need to spend 4,000 on a big rig , it all comes down to the skill you have. I am satisfied with doing butts, ribs, chicken brisket etc.
