Food Tv pork bellys...

Did anyone else see Emeril last night when he did the pork bellies. He cut them into 4 or 5 inch squares, blasted em with high heat for 30 min (15 each side), then baked them for another 4...he then glazes them. Im sort of intrigued...I would think they would be sort of grosse with all the fat, but those that tasted them said otherwise...

Anyone ever had them cooked any way other than bacon ?
 
John what Emril made was cracklings...and they are awsome.......since when did you think that all that fat would be gross...mr. seven lbs of bacon used in one meal? :D
 
Oh man nothing beats some good craklin' bread! My grandmother used to make that all the time. Good stuff!

John all the pork bellies are already in the brine....but if I see more let me know if you want me to pick them up....
