Mike, I always plan on 8oz total serving on the sides (1 cup) so you might be a little high. Depending on what size bun and the type of chicken pieces you use then the pork and chicken are probably good. I'd try to use a larger bun and figure around 6oz per sandwich. Chicken is real cheap, I'd cook a little extra. Last week I cooked chicken drumsticks that were purchased at Cosco. My cost was $.21 cents per piece and nothing could be easier to cook.
