Going to try a whole Mackerel today. Started off at about 10lbs. Cut the head and tail off and gutted it.

Made a brine out of
1 gal water
1 1/2 cups salt
3/4 cup brown and 1/2 cup regular sugar
1 tbls pepercorns
1/1/2 tsp each allspice cloves and ground ginger
4 bay leaves
2 cloves garlic
about 3 hours.
 
My, this could get interesting. So do you think that is really a mackerel, and what continent did it come from?

It is Spanish mackerel! I split my time between here and there for the winter, nuthin like a Zimbabwe winter! I had problems yesterday getting this board to work. anywho, you figured it out!
