1.5 C beef or chicken stock
3/4 C fresh mango puree
1/2 C honey
1/4 C white corn syrup
2/3 C white vinegar
2 Tbsp tomatoe paste
1/4 tsp liquid hickory smoke
1 tsp sea salt
1 tsp paprika or tumeric
1/2 tsp granulated onion powder
1/2 tsp coarse black pepper
1/4 tsp dry mustard
1/4 tsp granulated onion powder
1/4 to 1 tsp chipotle chile powder
Dash ground Allspice

Combine all ingredients in saucepan over medium high heat, wisk until smooth. Bring to a boil, reduce heat and simmer 30-45 minutes, stirring occasionally, until thick. This thickens substanially after cooling. Remove it from heat when it's still a little thinner than you would like. If it does get too thick after cooling, thin it with a little water, stock, juice or vinegar.

For a sweeter rib sauce, add an
extra 1/4 C of white corn syrup.
