Propane smoker regulator Modification

Hi Guys!
I have a vertical stainless smoker from Hong Kong and Sam's club. It burns too hot, even on the lowest setting (240 degrees) with a three column burner. To keep it around 190 deg, do I need to change the burner size? or the regulator flow? Or both? Where should I look for one?

What are you trying to do, cold smoke? Most of us here can, and will tell you that, when smoking food you do want to be up around 225° to 250°, in some cases even higher.
 
Propane Mods

Indeed! I have been cold smoking with charcoal for almost 30 yrs and just now received a vertical, stainless propane smoker. The design has too big of a burner, mounted directly under the water pan and thus, the water evaporates too quickly and the temp won't get much below 230. The reason I like the propane is so I can set it up at midnight and let her go while I sleep. I'm hoping to get it down to 190 . I am trying to find out the best way to replace the burner and if I need to get a different regulator also.
