A couple of lbs CSRs rubbed with a simple homemade rub. Cooked them uncovered for about and hour and a half.


Put them in some foil with a little Bone Sucking sauce for about 45 minutes.


Took them out of the foil and added a little more sauce to them and cooked them direct to get a little char and color on them.


Plated with some beans and cole slaw
 
Lookin' really good there John. I smoked up a pork loin today, cut it into about 5" chops, had me a good time eatin' them too. Was gonna take some pictures, but all of my camera batteries were dead. I think I am gonna have to buy some more, they all keep dying to damn quick. I have had them for about 15 years so yeah they need to be replaced.
 
Looking good. Those look like maybe real CSR's off the tail end of he loin. They pass off thick sliced butts as CSR's around these parts.
