Well it turns out that I had a couple of chicken breasts leftover from dinner last night. So being frugal, I made up some Chicken Alfredo with Mushrooms.
First I laid out everything I was going to use for this little adventure. 2 chicken breasts, some mini penne, mushrooms, some garlic infused olive oil, and of course BUTTER.....
Added some butter, and olive oil to a large pan, got it up to heat and added the mushrooms. To the mushrooms I added some salt, and pepper.
The salt is mostly to draw out the water in the mushrooms. If cooked properly it takes about 20 minutes to cook mushrooms.
Water is important to pasta, when making pasta, you should always salt the water, and add a little neutral oil, so the pasta will not stick together.
ONWARD!!!!! I took the chicken breasts, de-boned them, and gave them a once through with a knife.
Back to the mushrooms for a minute, to check on them. They are getting to that nice golden brown color.
I am using Mini Penne, because they hold sauce well. Remember to cook to Al Dente. The noodles will continue to cook after adding them to the sauce.
People often ask me why I set a wooden spoon across a pot that has boiling water in it. Simple reason.!.
If the water has a starch in it, we all know if you leave it on high, it will boil over.
If you lay a wooden spoon across over from one side to the other, the wood absorbs the starch and won't boil over.
Never leave your utensils, in your pan, they can burn, or even crack from the heat.
Here I have added the chicken to the mushrooms, to genitally heat it up. I also add about 1 tablespoon of butter to the chicken too.
To the chicken i added in some dried basil, italian seasoning, and some minced garlic.
Sauté for about 5 minutes.
Here I added in some Alfredo Sauce that I had in the freezer. You can make Alfredo Sauce in batches and freeze it, which I do.
I can not stand canned or jarred sauce. Has way too much salt in it.
Normally I would keep about a cup of the water that I cooked the noodles in. Since this is a cream sauce there really is no need for it, so I just discarded it.
Next was adding the noodles to the sauce.
Stir it all together, and add in some fresh Romano Cheese.
Stir in the cheese.
And Serve. Bon Appetit!
