Teriyaki Chicken Salad with Peanut Sauce

I wanted something light to eat today for lunch, so here is what I made.

I took some left over Teriyaki Chicken from the other night sliced it up and heated it up some.

Made my self a big salad, added in onions, carrots, radish, you know the normal what food eats food.

Then I cooked up some Asian inspired dressing. Added some peanut butter, brown sugar, salt, pepper, dark soy sauce, and a little sesame oil. Then cooked until the peanut butter melted and mixture was warm.

Here is what I got in about 10 minutes.

I know alot of you will be all like "Hey salad? Isn't that what food eats?" But I have been eating healthy now for 2 years, and have dropped over 125lbs. It is in my best interest to keep eating like this even if you do not agree with it, lol.
 
Congrats on the weight loss, I think I picked it all up from you...LOL
nothing wrong with a solid salad...looks great!

My wife got me on the healthy diet about 2 years ago, eating more fruits and veggies and I am down from a 40" waist to a 36". Keep up the good work!
