Taking up Smoking in South Dakota
 
Hello! I've been smoking on my gas grill for a long time now but have grown tired of temperature fluctuations, and inconsistant results. I've decided to take it to the next level and am almost done building a custom smoker. It's a cabinet style with tounge and groove knotty pine construction. I'll post some pictures when it's done.

It's great to be here. Thanks in advance for all the information here and the advice that I'm sure is yet to come.

I just finished the new smoker. Here are a couple of pics of the finished product and a couple of the progress along the way. I have both a double electric hot plate (1650 watts total) and a 2 burner camp stove. I think I will start out with the camp stove.

I'm finally done with the smoker build. Here are a few pics of the finished product.

Now all I have to do is take it for a test smoke. I have a 2 burner electric hot plate and a 2 burner camp stove to put in the bottom. I think I will try the camp stove first. I have a 3" inlet hole at the bottom for air with a damper to control air flow and a 3" chimney with a damper also. Any advice on how to best control the air flow with on one of these?

Thank you very much! My daughters baptism is tomorrow so I am going to 2 center cut pork loins in it and then a have some beef back ribs for tonight. I really hope it works well.

Good idea, I dont think you are going to have enough air inlet, and output for that. You may want to try a single burner, like for a replacement for a turkey fryer. You have get a low pressure or a high pressure version. This here is a great place for outdoor cooking Academy Sports + Outdoors

Also to keep your smoker from burning you may want to get some fireproof tiles, or bricks to insulate the wood from damage.

Well, the little camp stove turned out not to be the right option. To get the little propane line out the back it sat way to close to the rear wall and and ended up burning a little between the lid of the stove and the back wall. So I took the lid off for the next cook and was able to turn it a little so that one of the burners was in the center. That worked well but that little coleman propane tank lasted about 45 min. That is just not going to cut it.

Plan B: I am either going to insulate it a little better on the inside and just use the hot plate I have (I didn't want to go electric but if that's the only way I will) or I've been toying with the idea of a small wire basket to for charcoal. I have a pan that I could put in the bottom to catch the ash and hang the charcoal basket from the lowest rack that had the water pan on it. I wan't to try the charcoal option but I really don't want to start it on fire again. Do you guys think that the 3" inlet/outlet will be enough air to make this work or will charcoal get too hot in something like this.

Electric is the best & safest way to go with that wooden unit... IMHO

Yeah I would have to agree, with an open flame wood tends to catch fire to easily.

I used to have a smoker like that one, but the fire dept. Took it. They said I wasn't responsible enough to have a wooden smoker.

Well, For my last run I smoked some spare ribs. I made a fine mesh basket and used charcoal. I put a couple of old granite tiles in the bottom along with a pan to catch the ash and it seemed to work pretty well. I only used about 10 brickettes but the temp got to about 220 and stayed there pretty well. I was leary about it catching fire with the charcoal but I think as long as I don't get carried away with it I will be fine. I am going to do a brisket this weekend so I think I will use a little more charcoal initially and see if I can get a little more heat of it with out burning it to the ground.
