Eggplant Parmesan & Paneed Pork Chops

Okay so I cooked a big pot of homemade chili this morning and my wife took over the cooking of the Eggplant. Now that's not all we cooked today. Yesterday while at the grocery I wanted to get some thin veal cutlets to paneed but they didn't have any veal so I grabbed a package of thin cut pork chops.
This morning while cooking the chili I sprinkled a little Italian seasoning on the chops and pounded the thinner than they were and set them in the fridge to absorb some of that delicious smelling seasoning.
First a little tenderizing and then I pounded them thin.

As I finished cooking them I sprinkled a little fresh grated Parmesan and Asiago cheese on them while they were still hot.

Served with Angel Hair Pasta and Red Gravy, Eggplant Parmesan, and warmed St.Joseph Bread. Oh, alaso had a nice salad on the side.

The salad. No this wasn't my salad. This was the whole big bowl of salad for everyone.
