PLT (Pancetta, Lettuce and Tomato Sandwich)

Probably posting this in the wrong section but anywho,

Smoked some Pancetta yesterday along with some ham and pork loin

Waited until today to slice it up and just in time for lunch.

A few slices fried up for a few seconds on a CI pan

Toasted a Ciabatta roll on the same CI pan with a little butter added to it.

Some mayo, lettuce and tomato added

and plated with some leftover tater tots. I'm sure this is probably some hick, redneck way of eating Pancetta but I don't care, that was one great sandwich!!

Glad you posted that just before dinner, not while I was at work.
How does cooking those tots on the grill workout?

John, everything looked excellent.....however the second picture was simply intoxicating! Gooooood Gawd it looked goooood!
 
I have made a decision to track down some of that stuff and give it a sample one day. Hope it aint as unremarkable as Proscutto? I went to the store and bought some for 8 bucks a pound to stick with a recipe. Ham would have tasted just as good if not better for a big savings in the wallet. Guess them Eyetalians is rich folks..lol.
