Wow, When I'm up at weird times, I don't need to see food like this. It's way too late for dinner and about 3 to 4 hours 'til breakfast. Now my stomach think I'm hungry and I won't be able to go back to sleep. I know what I've got to make in the next few days. I think I already have everything except the lard. Butts need to thaw.

Well surely an occasional indulgence couldn't hurt a person too much. My Grandparents ate lard out of the bucket with a spoon and both lived to fairly ripe old ages and were seldom sick. Unless Dr. Atkin's was telling a big fib..there has never been any scientific studies which have shown a link between cholesterol in the diet and in the blood. If yall are having problemos in that area try this each morning: 1 cup hot green tea mixed with a Tablespoon of local honey and a Teaspoon of ground cinnamon. That will knock it in the head.
PS Edit: Now this is in addition to your twice daily intake of Fish Oil and Garlic. Would also be good to add some Milk Thistle (very helpful for your liver...be sure it say Standardized Extract on there). If you really want to get healthy snag some UNDENATURED Whey Protein. Its fairly pricey at the health food shoppes but about half price on line. Now if you have access to fresh unpasturized milk..cow..goat etc..just drink a little of that and you can skip the whey. You also need some daily consumption of Tumeric or its more pure derivative called Curcumin. That is real low cost chemotherapy..proven to prevent and cure cancer. Hope this helps.
