Monday came and my friend Larry said that he was going to the store to get a brisket and I have to smoke it today. Not going to get an argument from me. Sadly, there was not ONE brisket to be found!! So instead, he picked up a 7.12lb pork shoulder. Hey that's ok too!
So as always, a picture of the day!
Lot of people were out on their boats (including an idiot you'll see further down!).
Removed the THICK fat cap but left the "good" fat on there.
Threw that bad boy on the smoker and away it went.
I put it on the second rack because I had to put these bad boys on top!
ABTs were stuffed with pork trimming from the ribs I cooked on saturday and fresh mozzarella cheese!
Pulled off and ready to devour!
Also made some burgers while the pork shoulder was smoking. Added some of that fresh mozzarella, some guacamole and my wife added the little tomato on top.
Checked on the pork shoulder. This is about 4hrs in. Some of the fresh mozzarella dripped down onto the pork shoulder mmmm.
And here is the idiot. He's an idiot because he's not in the channel and got stuck for THE SECOND DAY IN A ROW! Really!?
There were kids going by in a little boat and stopped to help out. One is in the front trying to push the boat. The water is knee deep...
Well after laughing at this guy for the second day in a row, my friend Larry broke out some cigars!
This is the guy who also calls me and brings quite a lot of stuff for me to smoke on the smoker. All of the food in this cook he provided! Good guy! Everyone needs a friend like this!
Well, after trying not to pass out from beer and a food coma, here is the pork shoulder ready to come off.
Had it on for 7hrs. Kicked up the temp after about 5hrs so we finished at a decent time.
Pulled after resting for an hour
And one last pulled pork sandwich before passing out
