Took out the cast iron pan and added some chorizo.

Then laid in some flat bread in the chorizo grease and got one side real hot. Flipped and added shredded cheddar. Then topped with the chorizo, jalapeno's and some salsa.

Wish I had some sour cream.


Didn't last long.







 
Tex, that was actually a piece of flatbread, which is thicker than the tortillas...eats just like a pizza, or you can fold it up.
 
so easy and so quick...get one side hot, then flip and add the cheese and whatever toppings you want. Great with regular sausage too!
