Here is a recipe I make every so often. It is fairly hot but flavorful. Letting it age makes it a bit better but you can Use it as soon as you make it.
5 Yellow/orange habanero peppers, destemmed
1 cup diced white onion
2 cups grated carrot, packed
2 oranges, zested and juiced
2 lemons same condition
1/3 cup cane sugar
1/4 cup honey
6 cloves crushed
1.5 cups white vinegar
1 roasted red pepper
In a large pot boil all the ingredients for about 15 minutes.
Blend into a liquid.
Bring back to a boil and let roll for about 10 minutes
Bottle and age for 30 days.
