I wanted to do something different with pulled pork so it was street tacos for dinner last night. I took some pork out of the freezer the night before to thaw. In a cast iron skillet, I added a little bacon grease then tossed in the pork and heated it up on low. While the pork was cooking, I placed some fresh small corn tortillas on a griddle and cooked until hot. My wife chopped up some onion and cilantro and made some fresh chipotle sauce. I made mine with just the meat, onions, cilantro and chipotle, while the kids added cheese and sour cream to theirs. They where very tasty and will be on the menu again soon, I’m thinking they would be perfect for a football Sunday.
