I've been taking advantage of the tropical heat wave (3 days in a row above freezing! ) to get acquainted with my Xmas WSM.

Night before last it was ribs, rubbed with Swine Syndicate RubOut and lightly sauced with a maple sauce I've been experimenting with:



Last night it was chicken, spatchcocked and rubbed with WRC:
