I've been taking advantage of the tropical heat wave (3 days in a row above freezing! :shock: ) to get acquainted with my Xmas WSM.

Night before last it was ribs, rubbed with Swine Syndicate RubOut and lightly sauced with a maple sauce I've been experimenting with:



Last night it was chicken, spatchcocked and rubbed with WRC:
 
Ribs & chicken look real goood NewHeart!
Looks like you got the new WSM dailed in just
right ;)

Yeah, I think you could say that! The wife thinks I'm nuts, but she hasn't left anything on the plate yet.
