To make 9 cups of stuffing:
3 cups of chopped onion, red bell pepper, and mushroom
2 cups of chopped pepperoni
minced garlic to taste
1/2 cup of butter or margarine
7 cups of toasted garlic or Italian style croutons
2/3 cup of chicken or vegetable broth
2 teaspoons oregano
2 teaspoons basil
2 teaspoons worcestershire sauce
In a large skillet, cook garlic,vegetables and pepperoni in the butter
over medium-high heat until vegetables are tender (about 10 minutes);
Add croutons, broth, oregano & basil. Toss gently until moist, add
worcestershire sauce, toss some more.
Stuff turkey or put in casserole and refrigerate until ready to use,
then pour more broth over top ( 1 tablespoon per cup of stuffing)
toss, cover and bake at 350 for about 20 -30 minutes
