Advice on pork tenderloin and beef eye of round roast please

Stew beef ain't exactly know for it's tenderness. That's why it's usually braised. I've done em on kabobs before though. Cut em into little pieces, and jaccard the living crap out of em. Try to find an oil based marinade (evoo would help) and grill em up. Like steak, your want to grill instead of smoke these.

Best thing you can do is cut em small, cause they will take a little chewing. Lots of little pieces!!!

I have heard of some people wrapping the pork tenderloin in bacon and then smoking it. They say it keeps it moist.

But if it were me I would just grill it. :D :( :D
