I came up a about 3lbs short on the initial pork orders I had, mostly thanks to the bag I dropped on the floor and then I got a couple more orders yesterday. Back to Wegmans I went and got 4 more monster butts, smallest being 9.51lbs and the biggest being 10.41lbs. Rubbed them down and they went on the WSM around 6:30pm last night and they're sitting at 177º now, had to add a little fuel around 5:30am but overall an uneventful cook thus far!

I ended up with 18lbs of finished product from 40lbs raw meat. This is the second batch of Wegmans shoulder that has yielded less that 50%, BJ's butts are always 50% or more yield...... :confused:

The white stuff on the bottom butts is the fat from between the fat cap and the meat on the top ones when I removed them. Nasty looking huh?

Well, they tasted no difference, but with the lower yield than normal I would say yes, they were more fatty!

I ended up with 58lbs of finished product between the two cook and I have sold it all except for a pound and a half!!!!!!! Not bad for a weekend worth of drinking beer and making BBQ!
