It never fails, I start cooking and a monster storm comes. I put on a 2.5lb top round last night for a reverse sear and while doing so I noticed clouds were building on the horizon and I knew I had plenty of time.......so the meat is up to 100º and I go out to remove the meat and tuck it in foil while I through on the hasselback potatoes and the onion and bell pepper. I crank the heat up to 425º, and as I'm adding everything else to the grill lightening started snaking and striking TO close, close enough that it made me drop my beer and bolt inside. It actually blided me like I'd just had my picture taken with a flash right in my eye, scared the Puff out of me! So this storm continued to get worse, so I totally wrapped up the meat cause I knew it was gonna be awhile until I had a chance to go back out and sear. About an hour later and the power now out, I was able to finish the cook. Considering the circumstances, everything turned out okay, even though the meat is overcooked from sitting in the foil for so long.
BTW (You know who you are) - THE PEPPER IS SUPPOSED TO BE CHARRED......you scrape the skin off before eating, but as you could tell I missed some on this one due to it being dark in the house with no electricity.
