getting ready for a feast with a small group of friends.

first, earlier this week I made a ham stock...then I bought a bushel of shelled butter beans and a bushel of Dixie Lee peas (crowders). Mixed those together and created a fantastic pot likker....this goes over rice.

Also grilled a couple of tri-tips last night...the smaller one I got into
pretty quick...it was a little overdone, but I'm hoping the big piece
is perfect...will re-heat tonight and find out. Grilled shrimp with Rev
Marvins also on the menu, along with corn, fresh tomatoes and more.















 
well I made the beans and ham for poker night...the rest
go into the freezer, except for this weekend. They came out
fantastic.

The tri tips should make several meals....only 3 or 4 folks for
tonight, but my neighbor is also cooking and he's making
chicken bog, corn on the cob, and who knows what else.
More pics coming. I wish it were dinner time.
 
stuff happens, and I only got 2 more shots...the bigger tri tip was
perfect, and much more tender....plus we had the okra corn thingy I love.

Man that tri looks nice. I see you said it was re heated. Did you pull it off rare knowing you would be re heating? If yes, what temp did you pull it? From the looks of the results I would like to give that a shot. Looks like "Butta"

I pull it at 125 regardless of when I'm eating it. The trick is the re-heat.
After resting, I wrap it in plastic wrap and then put it in a freezer
bag in the fridge. The next day, I left it wrapped in the plastic and
used the defrost setting on my microwave a few times to heat it up.
Worked like magic...got it dang hot without drying it out.
 
Jim, put your hands up!!! This is the food police!!! Hand over the okra dish right now!!!! SS wants to eat all of it!!... ;)
