Here's my most recent incarnation...pretty dang close to what I'm
shooting for, but the experimenting will continue.

2 lbs sirlion mix
2 cups water
1 big white onion diced
1 med vidalia diced
1 T crisco
6 T mustard
1 T chili powder
2 T woos
1 T chopped garlic
3 t sugar
1.5 t salt
1 cup ketchup
1 t cider vinegar

Break up the hamburger meat and put into a pot.
Add enough hot water to make a thick mix. Stir until smooth.

Add the remaining ingredients. Cook slowly for 1 hour.

I also use a stickblender thingy to create a little gravy
floating around in the meat.

This may sound gross, but use ground beef heart instead of your sirloin mix. :P

The coney dog place that was around here for 50+ years used beef heart, they were practically world famous. ;)

Needs a touch of Cumin powder to be a chili thing. Consider a light touch of allspice. Then again, if you like it, leave it alone.

He has chili powder in it.......most commercial chili powders contain cumin! Have you made Jims chili?
