Old Town Ham - The Beginin!

Well here be the start of our first Old Town Ham, see how this en goes an what changes if any we be makin.

a 9 lb shoulder, injected with cure, especially round the bone!

The cure, cooled an ready fer the long soak.

This gonna take 18 days er so ta cure. Then we gonna hang fer a couple a days an then inta the smoker with a nice batch a maple wood!

It be a ham were developin fer our cash an carry business as well as caterin. What ya would call a "City" ham in as much as it ain't a dry cure country ham. But even at that should put any store bought ham ta shame!
 
Hey Maynard looks mighty tasty. Where you get the fresh ham? They sorta rare down here unless a person buy them wholesale maybe.
