We had a 'light' dinner tonight. Blue cheese augratin tators and onions with shrooms. Spagetti squish with mushrooms, and some sweet baby carrots. And beer.

I love spaghetti squash good stuff (and also easier to get the kids to eat something like that)
 
Recipe for tators:

Chop tators and onions 1/4 inch, 2/3 tators and 1/3 onions
put butter in the bottom of the dish, about 1/4 stick
Crumble up blue cheese, about 1/4 cup
Layer tators and onions and blue cheese and a few more 1/4 inch pats of butter(see picture)
cook at 375 to 400 until the tators are tender.

Squish:
Cut in 1/2 and remove seeds
Put as much butter and mushrooms in the cavity as you want
Cook at 375 for about 1.5 hour or until you can take a fork and shread the meat of the squish.
Finish with seasoning to taste and more butter.

No meat JB. I was red meat out after the porterhouse(Doctors orders)
