Over Night Brisket

I thawed out a 14.5 lb packer in the bath tub. The thaw time was about 4 hours. The brisket had been in my deep feezer. Deep freezers freeze things very hard. I think the 14.5 lb frozen brisket made 30 gallons of water drop to around 40 deg in four hours. Just guessing here but the water was very cool.

Anyway, my drum is wanting to run a bit hot so I am up tending to that. Brisket went on at 11:00 pm.

 
Did the cold water make your nipples hard? I hate when it bumps up against me in the water too. :shock: :LOL: :LOL:

With a tight fitting lid, a drum will operate smoother than a wsm.

After I figured out where my drum was drawing air from, it ran at 240 all night.
