carrot in hot sauce

I have a Carrot Habanero recipe I make and the carrots are grated and then blended with the peppers etc before boiling for about 30 minutes. I don't know about the carrots taming the heat as it is still really hot but it sure gives it a nice color.
 
Would think the carrots add a little sweet flavor..works thataway in stew anyway. Thanks for the recipe Stogie. Not sure I get up the energy to make it but sure looks good. Fella down here had some Iguana Brand Hab sauce from Costa Rikker..now I liked that purty good. Wasn't unbearable hot had a lot of flavor. Sure yours is even mo betta:)
