Offset Smoker: Buring wood vs. Burning charcoal

My offset eats charcoal like crazy.....IF I spread it out.

I rarely burn charcoal in it, but if I do, I put it in a Basket.
I made a basket out of expanded metal for the charcoal and
light one end of it only and it majorly cut down the consumption

I prefer wood mostly because it's free and I think it imparts
a better flavor
 
I just re-read your original post and realize that I missed the
issue about not getting temp from the charcoal compared to wood. :oops:

Doesn't seem the wood should burn any hotter then charcoal, :?
unless of course you are keeping the wood "in flames" the entire
time and not letting it go to coals.....
Or the amount of wood you have in there at a time is just much
greater then the charcoal.

If you have your heart set on charcoal, maybe try starting with
a good fire of wood untill you get a nice bed of coals and the
whole cooker is heated up to a nice even temp. and then
try keeping it going the rest of cook with the charcoal.

Beyond that...I guess I'm at a loss
Is this the offset you just recently built?
