Giardinare - Need a recipe

Hello All,

I have been looking for a recipe to make Giardinare with no luck. Knowing that this forum has members from all over I am hoping someone could pass a recipe to me. For those of you unfamiliar, giardinare is like a pepper chow chow in olive oil. Typically it is eaten on a beef sandwich.

Anyway I have tried but the giardinare I make spoils. Any help would be greatly appreciated.

Thanks JB. There was one link with a recipe that was pretty close. The recipe I am looking for, the gaiardinre is stored in Olive oil and is mostly peppers.

Still would appreciate a recipe that someone has made, Diva Q (or anybody who has made this condiment.

I am also warming up to make vinegar this summer, so any vinegar makers out there willing to share would also be appreciated. I just bought a 2.5 gallon ceramic pot with a spicket on the bottom, but that is as far as I have gotten.
