I have been wanting to try some butts uds style. Butts are smoking over kingsford and hickory.

The smoker is locking in at 240 in the dome.

One in the cooler and one at 191. UDS ran around 250 all night..... As far as I know. ;)

If I had known about these smokers before hand, I may not have purchased a wsm. They are very easy to adjust and they respond very quickly to tweaking. Plus they have more room than a wsm.

At 6:00 am I get up to check the temps and see that I have one at 193 and one at 180ish. That is wierd I tell myself. So I stay up until one hits 195. The other one is still in the 180 range. I go out and disturb a smooth running burn, readjust the probe and it drops ten degrees.

That really cut into my beauty sleep. Two hours later one is at 195 and the other is stll ten deg behind. The strange thing is the one that is still cooking seems more tender inside than the one that is reading 195.

I gave the bone a tug on both, and neither one really wanted to turn loose. I still have some learning to do on the wiggle test.
