Machacado con Juevo

This is called "machacado con juevo" . It is made up of "Carne Seca" aka Dried Meat (beef), chopped onion, chopped tomato, and crushed "chili pequins" or "chili de monte" aka wild chili peppers. I took the Carne seca and lighty fried it in EVOO, then added chopped onions, chopped tomatos and crushed chili peppers. Saute all that and then add 3 beaten eggs. Just cook like scrambled eggs after that. That's it. They sell this for breakfast everywhere down here in Texas.. Good meal...











 
That's some good old fashioned "down home" cooking right there SS. I would have to dice up a potato and fry it with the dried beef cause I do love fried taters. :D
