Don in Montana's Cheesy Beef Roast:
1 4-1/2 # Beef rolled roast (Heel)
Injection:
1 cup water
3 beef bouillon cubes
1" slab Velveeta cheese
1/2 cube butter
1/2 tsp. granulated garlic
1 tsp. cayenne
2 tsp. Tiger seasoning (or your favorite rub)
-On low heat dissolve mixture, let cool, but do not let the cheese start to
thicken
-Inject mixture into roast.
-Sprinkle the roast with Tiger seasoning and black pepper.
-Wrap in plastic and refrigerate for 9 hours or overnight.
-Sear all sides well.
-Indirect smoke with mesquite wood.
