WSM double overnight

I did an overnighter last night on the WSM. These first two pics are an 8 pound chuck that was on the top grate.





And on the bottom grate, two pork butts.







It's all vacuum packed and in the freezer. Everything went on at 8pm lastr night and off at 11am today.

The chuck was 8.2 pounds and took about 15 hrs. It was amazingly moist.
