Turkey leg and wing thoughts?

Let me try not to ramble in this post.... I am looking to throw some turkey legs and wings on the smoker for memorial day. I have always wanted to try the brine listed below, that I saw on the Weber forum while back. I wanted to get peoples opinions this brine? Has anyone else ever tried this?

Apple Brine

For the rub I was looking at using the Yardbird rub, Wolfe original rub, or the rub recipe listed below. I found the recipe below on most of the threads I found about turkey legs. Any suggestions on rubs?

3 Tbsp onion powder
2 Tbsp paprika
1 Tbsp garlic powder
1 tsp ground pepper
1 tsp ground cumin
1/2 tsp rubbed sage
3 Tbsp vegetable or light olive oil
In small bowl, combine spice rub ingredients with fork til well mixed. Rub onto turkey legs. Let drumsticks sit out for about one hour.

I know this is a weird thread, but I figured it doesn't hurt to ask for peoples opinions.

Use the apple brine. Then make some Wolfe rub citrus. That will be icing on a cake. Trust me on this one. Wolfe rub citrus with anything that has wings and you won't go wrong.

Nick - Have you tried that apple brine before? It looks to have a lot of ginger and a ton of brown sugar... Is that correct?

I love the Wolfe citrus on chicken!!! Thats a good idea for the turkey pieces.
 
Well everything came out amazing!! I don't know why I haven't done turkey legs and wings before....

I added a higher rack to the UDS so I could fit all the turkey.

I ended up throwing some Yardbird run on the legs and wings a few hours before they went on the UDS.

After about 2 hours

3 hours and they are done!
