Highly dependent on the pit temps. I did two 9 pounders for T Day (this be the models with the backbone still attached) and it took 4 hrs to get them to 160 with a pit temp somewhere in the general vicinity of 295. Since you cooking one that should shave some time off that total but prob not much if the temps happen to be the same. I would start sticking it with the Wally World gauge after 2 hrs or so. First time you stick it should give some notion of how much longer it needs to go.

Thanksgiving morning I did a 7.5 lb bones in breast on my Weber Kettle at 325deg it took 2.5 hours after everything got settled in, pulled at 165 and foiled in cooler .

Thanks you guys! I opened it up this morning (didnt brine this one) and rubbed it down....TO my surprise it was a whole bird with the legs thighs and wings taken off......Last time I bought turkey breast it was smaller and it was all breast meat in a mesh bag...Thats what I thought this was going to be but it turns out its not...yahoo! It'll be similar to smokin' a whole bird! ;)

Yeppers the Lord gave you that back bone for a purpose..which is to keep the breastes nicely basted from the inside as you cook it breastes down. Do not spill that juice!!

(im sure everyone here knows that, but I had to say it anyways).
