Scotty's the winner of the mystery "hand"...it is a piece of the spareribs that i did on the kettle (aka Brutus) the other night....they were a little crispy, but not too bad, i had trouble keeping the temp down (a little too much charcoal), but they were really tasty nonetheless....

Like Scotty said, when you buy them from a supermarket butcher around here, they trim the crap out of them (too leaned out, imho), then they split the large ribs into little "fingers"....must be for people who grill them, 'cause they probably end up cooking evenly with respect to the other end of the rack....don't really like the concept for the smoker (i would just cut 'em down to st. louis style), but for $1.99/#, i couldn't really complain....

glazed them with a bone suckin' sauce clone (which i will post when i get the ingredients measured out)....
