I have a friend who has been cooking whole hogs out in west Tennessee since he was a kid. After seeing a TV show a while back about whole hog cooking in that area, he advised he grew up there and sent me this pic the other day from a recent family get together. The metal to the right goes over the hogs. Thought it was a cool pic of old time BBQ

Whole hog over direct coals. Got to love it. I have done a few like that, but never so close to the coals.(I wonder how far the coals were) Just think the fat dripping on the fire and the sizzle,smoke just make for a more tasty pig. We went to a whole hog cook last weekend, (LP Gas :roll: ) No flavor, tons of sauce, no wood. But folk liked it. Why, I'll never know.

I cooked one today, but not quite like that.....That is one kewl pic and something I'd Love to try some day....
