Is there anyone out there with a Tejas brand smoker? My 2040CC is a dream to cook on and keeps it's temps at a good range. The MFG. suggest using water as the ballast medium, but I have modified mine with plates and have a variance of 10-15* from side to side using preburned (wood) coals. This is a well built unit designed as a Klose knockoff, but at 1/2 the cost!!! :P This unit allows me to smoke enough for 2 to 100 or more in batches! ;)
