Gave the UDS another run today.
Put a chuck roast, a rack of spares, and some homemade Polish sausage on. Cooked over KF, cherry, and hickory.
I used woosty, salt, and pepper on the chuck.
Spares were rubbed with Uncle Al's Wicked Good rub.
She held 230* all day. Had a temp spike when I put the spares on. But leveled back out with no problem.
