Tell Everybody JB said HI BOY!

I was talking with Surfinsapo about the Finny method & how to use 1 grill only. We didn't want to fire 2 grills to cook the meat. with my modified gas burner I can hold the recomended 275 slow roast & then crank up the regulator For the hot sear.

You only need one grill a charcoal one....set it up for indirect cooking at the recomended temp...then when the meat is resting...let a bunch of O2 in add more lump if needed..and when it's super hot..sear the meat...Sometimes I wonder if you been paying attention...pokin holes in sausage...Gas Grills...I don't know BOY :LOL:
I've got a couple of Chunks of Beef I'm doing today...maybe I'll try the finney method.
 
Man JB, when you cut into the thing it exploded with juice. Do a big fat steak now if you can. No stuffing. How long can you let it rest before the end searing part? If I use one pit (kamado) I will have to wait a few for the tuscant grill to get up to searing temp. You did good though for your first time JB...

Yea I let it rest after searin too. I edited out a the part of me makin comments on the juices pourin out when sliced. It was real good & the stuffing flavor pemiates the meat. I'll try it again on a thick steak

Thanks for the copking lesson JB. I have a gasser that is med warm at best when wide open. Been eye balling one of those adj regs wondering if they would help. Yours looks great. Gotta get one.
