What temp do I want to pull a chuck off the WSM. How long is the normal cook?

Hey there Big Brother! Smoke the chuck in the smoke until it hits 165º and then foil and continue to cook until it's tender. Don't go by temperature to determine doneness, but start checking for doneness around 195º by sticking a fork in it and twisting, if you can't twist the fork continue cooking until you can!

I hope you're using the family secret Wolfe Rub Bold on that!!!!
 
thanks for the info (pics to follow). I'm using Wolfe Rub Original instead of bold. The wife likes the original better and I have to keep her happy.
