Hey there Big Brother! Smoke the chuck in the smoke until it hits 165º and then foil and continue to cook until it's tender. Don't go by temperature to determine doneness, but start checking for doneness around 195º by sticking a fork in it and twisting, if you can't twist the fork continue cooking until you can!
