Smoked Pompano snack

I took one of the pomps from the other day and smoked it with hickory and seasoned with olive oil and D-Dogs original bbq rub. I didn't let the temp get over 200 f. Tastes really good.

It was fun watchin' you catch the Pompano, good seeing how you smoked it, and it looked great when you ate it. You need to hit the Food Network ... Iron Chef Sapo!

Yeah, had my neighbor done that we would have had a problem! I mean, you're a nice guy Sapo and like Scotty said you weren't loud.....

BTW, the fish looked great! Growing up on the NC Coast, we ate a lot of pompano and I love them! Next time you smoke some put them in a simple brine for an hour, it does wonders to smoked fish!
