smoked bologna

Bought a whole bologna to slice..left a chunk and threw it in the WSM today...let it go for around 3 hours..had a nice flavor, but a better texture..I can only describe it as "tender"..Made a great sandwich..



Ya, Im a bologna smoker...(figured Id say it before one of you other guys do ! )
 
WAs walking around the different sites at the Jack early Sat morning and a backyard team (from down south somewhere) had smoke a whole lunch meat log and offered me some. It was outstanding. Got to try it.
What temp...how long?????????
 
Remeber the lunch meat is already cooked your just hitting it with some smoke and warming it..225-250* for 2-2.5 hr at least for my .02

Thats exactly what I did..
