Just my wife and I here .... I just did that for fun :shock:
 
Hey Div, I've never scored my butts like that, what's the benefit and do you see a difference. I guess one would be that the smoke penetrates deeper into the meat and maybe the bark tends to get a little more crispy?

You get more smoke penetration and you get more bark because you have a bigger surface area.
